Hill Lemon or Galgal or Citron is a large fragrant citrus fruit with a thick rind, widely used in Indian cuisine as well as traditional medicines. It is one of the three original citrus fruits from which all other citrus types developed through natural hybrid speciation or artificial hybridization. The citron is native to the valley of foothills at the eastern Himalayas in Uttrakhand. It's other names are Khate or Big-Lemon. Galgal is probably the most cold hardy lemon. It can withstand temperature upto 25 F. Kumaon lemons is confined to a limited extent in India due to high acidity and less content of sugars in its fruits.
