Mangori is a type of  Badi (a traditional preparation of making dry nuggets out of soaked and ground batter of different kinds of lentils) made with Moong Dal in the Uttarakhand region.

Mangori making is a traditional method of making lentil dumplings and drying them under the sunlight. It is the oldest way to bring all the women in the house together at one  place to put the lentil dumplings in a mat/cloth/ aluminium utensils under the sunlight. Usually, the terrace or the big verandah is chosen where women make a big circle and they gossip to the fullest while making badis.  The badis are laid out in a circular form and resemble an artform as they wait to dry.

This traditional method of making Mangori is still carried on in almost all households in Uttarakhand.  While Moong badis are also made in other parts of the country Pahari Mangoris are different as they are smaller and when cooked simply melt in the mouth. 

This process of making dry mangoris is usually done during the Autumn season when the hills are bathed in clear sunshine after the rains and women also enjoy soaking themselves under the warm sun while making the mangoris.

The modern household however has slowly forgotten this traditional method.  There are modern techniques that have come into the market to make mangoris, but the way our ancestors used to spend their time and put their love into making those mangoris is beyond any description.

While Mangoris and Badis are used an accompaniment to the main course in the hills at all times, they are especially useful when fresh vegetables are not available i.e. in the monsoons, or when they are snowed in.

Great food

The food is great, the buying experience at the website is awesome and hassle free, packaging and delivery is good too. Personally, I would prefer if the food came in vacuum packed pouches for easier storage and transport, rather than glass jars. We have been buying regularly ever some we discovered this website.
