Pahari Ras Dal Mix is sourced directly from certified organic farmers of Uttarakhand and is made by combining whole dals to create the traditional and much-loved Pahari Ras. In Hindi and Kumaoni, Ras means juice, and the name perfectly describes this thick, dark, nourishing soup prepared from a blend of whole pulses native to the region.

This savoury dish prominently features Bhatt (black soybean) and Gahat (horse gram), along with other whole pulses such as black gram, rajma, and lobhia, making it a complete source of diverse plant proteins. Traditionally cooked in iron woks and tempered with ghee, Ras is naturally rich in iron and flavour. The boiled dal mixture is also used to prepare a dry side dish called Gude. Commonly enjoyed with plain rice, leafy greens, radish, and bhang ki chutney, Pahari Ras is a winter staple but is relished throughout the year in Uttarakhand.
